Chef Leslie's Famous Rub

Fajita Rub
Yield: Rub for 1 pound of protein

1 Tablespoon ground cumin
1 1/2 teaspoons ancho or chipotle chili powder
1 1/2 teaspoons regular chili powder
1/2 teaspoon ground coriander
1 teaspoon sea salt
1 large clove fresh garlic, minced or pressed
1 Tablespoon fresh lime juice
1 1/2 teaspoons olive or canola oil Several handfuls of butter lettuce Salsa (to taste)

Mix all ingredients together to form a loose paste. For a spicier rub, use chipotle chili powder in place of the ancho chili powder.

Rub the paste on your favorite protein - i.e. beef tenderloin, chicken tenders, shrimp, firm flesh fish sticks (i.e. from swordfish or salmon)

The slices of beef, chicken or fish should be cut about 1/2 inch thick and similar in size/weight.
Rub the pieces  again with the mixture and if using fish/shrimp, allow to sit no longer than 30 minutes total before being cooked.
Beef/chicken can be rubbed up to 24 hours in advance of cooking time.

Heat a well-seasoned grill and sear the meat/fish until well-marked on either side (about 3 minutes).  The rub will blacken a little bit but should not taste burned. Fish/shrimp will completely cook within that time,
However, meat or chicken may need to finish cooking for a few minutes in a 425 degree oven until done. The final cooking time is dependent upon the thickness and weight of the meat/fish you are cooking.

When cooled slightly, cut any whole pieces into strips. Drizzle a little salsa on top of a strip of cooked fajita meat.  Wrap in a piece of butter lettuce. Enjoy!

Refrigerate any unused portions.  Use for those times when you need a tasty protein snack.

Water- Make sure you are getting your 8 8oz of water a day
Exercise- Be sure to exercise a minimum of 30 days a day
Protein- Protein first, get in good solid protein a day at least 60 grams or more a day
No snacking- Avoid senseless calories
Supplements- We need supplements to ensure we are getting the vital vitamins our bodies needs to function in the manner it was designed to function.

"Believing how you see yourself is how others see you." - This is an untrue statement.

Your view of yourself is shaped by your unique thoughts and beliefs and you may have a very distorted view. You may see yourself in a positive/negative way and both will be extremely biased. You may have a negative view of yourself and be highly critical of yourself. Low self image can make many things difficult. You blame yourself for things that aren't your fault; you may underestimate your abilities, and you could be expecting things to go wrong .

So How Can You Improve your Self Image?

List things you like about yourself - include appearance, personality and skills

Change negative thoughts to positive thoughts by focusing on the positive ones and trying to forget the negative things that have happened to you Take up an exercise program - you will feel better and look better! Remember good things people have said about you and note them down (journal, blog, etc) Try the powerful method of meditation, affirmations, self-help programs or even hiring a Life Coach Read motivational and empowering books for mind, body and soul Question whether your view of yourself is accurate and examine why you see yourself like you do Take action and make any changes you think would help you - for example clothes, appearance, hair style, behavior with certain situations Accept things about yourself that are true and learn to think about them in a positive way while moving forward Take yourself less seriously and lighten up! Accept criticism in a constructive way so you can improve and develop Don't be limited by your internal image, step outside of it.  It doesn't have to control you or keep you down. Acting in a different way will change how others see you and will also help to change your own mindset towards yourself and your abilities Challenge yourself in a positive and realistic way.  You may surprise yourself!

Creating S.M.A.R.T. Goals


   S - Specific
   M- Measurable 
   A - Attainable 
   R - Realistic 
   T- Timely


Specific
- A specific goal has a much greater chance of being accomplished than a general goal. To set a specific goal you must answer the six "W" questions:

*Who:      Who is involved?
*What:     What do I want to accomplish?
*Where:    Identify a location.
*When:     Establish a time frame.
*Which:    Identify requirements and constraints.
*Why:      Specific reasons, purpose or benefits of accomplishing the goal.

EXAMPLE:    A general goal would be, "Get in shape." But a specific goal would say, "Join a health club and workout 3 days a week."


Measurable
- Establish concrete criteria for measuring progress toward the attainment of each goal you set. When you measure your progress, you stay on track, reach your target dates, and experience the exhilaration of achievement that spurs you on to continued effort required to reach your goal.

To determine if your goal is measurable, ask questions such as......How much? How many? How will I know when it is accomplished?


Attainable
- When you identify goals that are most important to you, you begin to figure out ways you can make them come true. You develop the attitudes, abilities, skills, and financial capacity to reach them. You begin seeing previously overlooked opportunities to bring yourself closer to the achievement of your goals.

You can attain most any goal you set when you plan your steps wisely and establish a time frame that allows you to carry out those steps. Goals that may have seemed far away and out of reach eventually move closer and become attainable, not because your goals shrink, but because you grow and expand to match them. When you list your goals you build your self-image. You see yourself as worthy of these goals, and develop the traits and personality that allow you to possess them.


Realistic
- To be realistic, a goal must represent an objective toward which you are both willing and able to work. A goal can be both high and realistic; you are the only one who can decide just how high your goal should be. But be sure that every goal represents substantial progress. A high goal is frequently easier to reach than a low one because a low goal exerts low motivational force. Some of the hardest jobs you ever accomplished actually seem easy simply because they were a labor of love.

Your goal is probably realistic if you truly believe that it can be accomplished. Additional ways to know if your goal is realistic is to determine if you have accomplished anything similar in the past or ask yourself what conditions would have to exist to accomplish this goal.


Timely
- A goal should be grounded within a time frame. With no time frame tied to it there's no sense of urgency. If you want to lose 10 lbs, when do you want to lose it by? "Someday" won't work. But if you anchor it within a timeframe, "by May 1st", then you've set your unconscious mind into motion to begin working on the goal.


"T"
can also stand for Tangible - A goal is tangible when you can experience it with one of the senses, that is, taste, touch, smell, sight or hearing. When your goal is tangible you have a better chance of making it specific and measurable and thus attainable.

A detailed diet history Current height, weight and BMI (body mass index) A list of all co-morbidities that are or may be caused by your morbid obesity A psychological evaluation/clearance A thorough medical history Internal Medicine Clearance A recent medically supervised diet history Medical records documenting your history of morbid obesity Certain medical tests
